Energy Bites 

Ingredients: 

1 cup dates, pitted 

1 cup mixed nuts 

½ cup unsweetened shredded coconut 

Method: 

In a mixer, blend the dates until they form a sticky paste. 

Add the nuts to the blender and mix until the mixture becomes coarse and sticky. 

Then add the shredded coconut and pulse until well combined. 

Roll the mixture into small, bite-sized balls. 

Place the balls on a tray lined with parchment paper and refrigerate for about 30 minutes so they become firm. Serve cold. 

Banana Bread 

Ingredients: 

1½ cups bananas, mashed 

¾ cup coconut condensed milk or plain condensed milk 

1½ cups self-rising flour, sifted 

Method: 

Preheat the oven and grease a baking pan and set aside. 

In a bowl, mix the bananas and condensed milk. Then gently stir in the flour and mix continuously until fully combined.

Transfer the batter to the pan and bake for 30 minutes, or until a toothpick inserted in the middle comes out clean.

Serve cool, with a scoop of vanilla ice cream. 

Peanut Butter Fudge 

Ingredients: 

1½ cups peanut butter 

½ cup maple syrup 

¼ cup coconut oil 

Method: 

In a pan , combine all 3 ingredients and cook on medium heat, stirring constantly. 

Once everything is well combined, set it aside and let it cool for a few minutes. 

Line a baking dish with parchment paper and pour the mixture into it. 

Place it in the freezer for 3-4 hours so it becomes firm. Serve cold. 

Yoghurt Strawberries 

Ingredients: 

Fresh strawberries 

Greek yoghurt (plain or flavoured) 

Honey or maple syrup 

Method: 

Line a tray with parchment paper. 

Dip each strawberry into the Greek yoghurt, coating it evenly. 

Place the yoghurt-coated strawberries on the parchment paper. 

Drizzle honey or maple syrup over the strawberries. 

Freeze them for 2 hours and then serve chilled. 

Pistachio Chocolate Bark 

Ingredients: 

2 packs semi-sweet chocolate chips 

¼ cup pistachios, chopped 

1½ tsp sea salt 

Method:  

Place parchment paper on a baking tray and set it aside. 

Add the chocolate chips to a glass bowl. 

Fill a saucepan three-fourth with water and bring it to a boil. Place the glass bowl on top, creating a double boiler. The chocolate should turn into a smooth liquid. 

Pour the chocolate onto the baking tray and spread it evenly. Sprinkle the pistachios and sea salt on top. 

Place the tray in the refrigerator for an hour. Break into uneven pieces and serve. 

Banana Oat Cookies 

Ingredients: 

2 bananas 

1 cup rolled oats 

¼ cup dark chocolate chips or chopped nuts 

Method:

Preheat your oven and line a baking sheet with parchment paper. 

In a bowl, mash the bananas until they’re a smooth paste. 

Mix in the rolled oats and the chocolate chips or nuts. 

Put spoonfuls of the mixture on the baking tray, flattening them into cookies. 

Bake for approximately 20 minutes, until the cookies are golden brown. 

Set aside to let them cool and harden. Serve with milk.
