Ingredients

  • 1.5 cups raw peanuts, shelled
  • ½ cup dark baking chocolate buttons
  • 2 tablespoons honey/maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 pinch sea salt

Method

  • Roast the peanuts in a dry pan until they turn a light brown colour on the outside. Add them to a blender jar while they’re still warm and give them a rough blitz to turn them into a sandy texture.
  • Continue to grind the peanuts slowly, taking small breaks in between so as to not overheat your blender jar. As it releases its natural oils and begins to resemble peanut butter, add the chocolate chips and cocoa powder and continue grinding into a paste.
  • Be wary of adding any oil or water to help the process as that might lead to disastrous results. Once the peanut-chocolate mixture turns into a paste of desired smoothness, add the maple syrup, vanilla extract and salt and grind once again.
  • Scoop out the contents into a glass jar and store in a cool, dry place for up to a week and refrigerate after, if using for longer.
