 680 g pork shoulder, trimmed and cut into small pieces

1 onion, diced

4 cloves of garlic, minced

2 teaspoons of ground cumin

1 teaspoon chilli powder

1 teaspoon dried oregano

1 teaspoon of salt

½ teaspoon black pepper

2 tablespoons of vegetable oil

1 cup of chicken or vegetable broth

For the Masa Dough:

 3 cups masa harina (corn flour)

2 cups of warm water or broth

1 cup lard or vegetable shortening

1 teaspoon baking powder

1 teaspoon of salt

For Assembly and Steaming:

 30–40 dried corn husks, soaked in warm water until pliable

Kitchen twine or extra corn husks for tying

 Instructions:

 In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and minced garlic and sauté until softened and fragrant.

 Add the pork shoulder pieces to the skillet and brown them on all sides. Stir in the ground cumin, chilli powder, dried oregano, salt, and black pepper, ensuring the pork is evenly coated with the spices.

 Pour in the chicken or vegetable broth and bring it to a simmer.
