Loaded Sweet Potatoes

Sweet potatoes can be used as the foundation to create a healthy version of hot dogs. Poke potatoes using a fork, grease them slightly, wrap them in foil, and place them in a baking tray. Bake them in an oven until you can easily pierce a knife through and through. 

While your potatoes are baking, prepare scrambled eggs or saute your favourite vegetables along with salt to taste and black pepper powder. Slice each sweet potato from the top and mash the insides using a fork. Carefully place eggs or vegetables in between and enjoy this hearty breakfast. You can top these with cheese and toss them in the oven for a couple of minutes for the cheese to melt.

Overnight Sweet Potato And Oatmeal

Fill a jar with one-third cup of water, oats, flax seeds, chia seeds, masala mix, and yoghurt in it. Keep it aside while you boil sweet potatoes. Carefully peel them, dice them, and add them to this mix at night.

The next morning, you will have a protein and carbs-loaded breakfast. You can also add half a scoop of protein powder to improve the richness quotient. This is the easiest recipe with the minimum amount of cooking, and you can consume it on the go if you are running late.

Sweet Potato French Toast

If you are tired of eating the same recipe of French toast, it is time to try something new with sweet potatoes. Take half a cup of boiled and mashed sweet potatoes and whisk them with eggs, ground nutmeg, and cinnamon powder. 

You can also add a few spices to infuse flavours according to your taste palette. Take whole wheat or white bread and dip it in the runny mixture until both sides are coated with it. On a large heated flat pan, cook each slice of bread on a medium flame until both sides turn brown and achieve a slightly crispy texture. Enjoy this with your favourite dip or sauce. 

Sweet Potato Breakfast Bake

This is a one-pot dish that is the most simple to make when you are in a hurry to feed everyone in the family and head to your office. Preheat the oven and meanwhile saute sweet potatoes in an oil-glazed pan for at least 10 minutes until they are a little soft. 

Keep the potatoes aside and use the same pan to cook some meat and vegetables along with the necessary spices and salt to taste. You can use onions, tomatoes, mushrooms, and bell peppers. Add everything to a baking tray, pour in whisked eggs, and give a good mix after seasoning with red chilli powder, salt, pepper, and fresh greens. Bake for 20-25 minutes and enjoy.

Sweet Potato Burrito

If you have leftover paratha, roti, or tortilla wraps, you can make burrito wraps in a jiffy using sweet potatoes. Preheat the oven and keep the baking tray ready with a parchment sheet lining. Toss in diced sweet potatoes and onions and season with olive oil, salt to taste, black pepper powder, garlic powder, and red chilli flakes. Roast them for about 20-25 minutes.

In a pan, add a few vegetables like tomatoes, cabbage, carrots, olives, bell peppers, and others. Cook them until they are a little soft. You can also cook up some scrambled eggs for an extra scoop of protein. Spread your favourite mayonnaise on the tortilla wraps, stack lettuce, onions, sweet potatoes, vegetables, and scrambled eggs. Wrap them and toast each of them in a pan.

Sweet Potato Chaat

Would you like to start your day with tangy and spicy notes of chaat? In India, chaat is usually consumed in the evening, however, if you mix it with the goodness of sweet potatoes, you can create a hearty meal to kick-start your mornings.

Either roast, bake, or boil diced sweet potatoes until they are soft. Add them to a bowl, and toss in some roasted peanuts, papdi, sweet and spicy chutneys, curd, chaat masala, and chopped green chillies. Top it with a handful of sev and enjoy it with a hot cup of tea in the morning.
