So whether you’re a vegetarian, non-vegetarian or eggetarian, there is always a salad to suit your taste. And now, it is time to up your lunch game, as Chef Cesar Bartolini (Bread Street Kitchen and Bar, Atlantis Dubai) presents to you his very own Superfood Salad recipe. With bright textures and delicious flavours, this salad will become your favourite as soon as you try it out!

Ingredients

  • 200gr - Kale, sliced
  • 250gr - Carrots, grated 
  • 350gr - Red cabbage sliced
  • 150gr - Fennel, sliced 
  • 1/2 bunch - Breakfast radish, sliced 
  • 1 oz - Pumpkin seeds, roasted 
  • 1 oz - Sunflower seeds, roasted 
  • 1 oz - Chia seeds 
  • 50gr - Alfalfa sprouts

Mix all these ingredients in a bowl. 

White Balsamic and orange vinaigrette 

  • 10 ml Honey 
  • 50 ml Orange Juice (reduce by 1/3) 
  • 1 Orange zest 
  • 20 ml white balsamic vinegar 
  • 50 ml olive oil 

Combine all ingredients with a whisk until emulsified. Add to the salad just before serving. 

Chef's tip: Make it an extra substantial meal with the addition of avocado slices and baked chicken breast.
