How to make Suji Dhokla?

Ingredients:

  • 1 cup fine suji (semolina/ rava)
  • ¾ cup yogurt
  • ¾ cup water
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1 tsp ginger (chopped/ grated)
  • 4-5 green chili (minced/ finely chopped)
  • 1 tbsp oil (vegetable/ olive oil)
  • 1 tsp Eno
  • 2 -3 cups water for steam

For tempering:

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • 7-8 curry leaves
  • 1-2 dried red chili
  • 1-2 green chili (slit cut)
  • Coriander for garnishing (chopped)

Instructions:

Dhokla batter

  1. Mix all the ingredients, except Eno- semolina, yogurt, water, ginger, chili, salt, lime juice, oil, and stir it into a thick mixture. Keep it aside for 10 minutes.
  2. After 10 minutes of resting the dhokla batter, add Eno into it and gently stir in only one direction. The batter will become frothy and increase its volume; don’t over stir the batter.
  3. Now prepare a steamer and grease the steel tray with oil.
  4. Quickly pour the batter into the greased steel tray/ plate and transfer it into a steamer.
  5. After 15-20 minutes, check the dhokla by inserting a toothpick; if it comes out clean means your dhokla is ready for tempering.
  6. Transfer the dhokla onto a serving plate and cut the dhokla into small handy pieces.

  • Heat the small pan with some amount of oil for tempering.
  • Add mustard seeds once they’re sizzled, add slit cut green chilies, dried red chili, curry leaves, and let saute for 20-30 seconds, now add sesame seeds and off the flame.
  • Pour the tempering with the help of a spoon over dhokla and garnish it with chopped coriander leaves. And your Suji Dhokla is ready served with green mint chutney or tomato chutney!

Note: If you don’t have Eno, you can use this alternative: ¼ teaspoon baking soda + ½ teaspoon of citric acid (1 teaspoon lime juice).
