Beans are one of the most famous vegetables in South Indian cuisine. This healthy vegetable is prepared very quickly in almost every South Indian home.

There are a plethora of ways to cherish this vegetable. The recipe can be cooked in a cooker as well as a pan and like many South Indian curries, Green Beans Curry begins with a tempering, followed by a base of sauteed onions, ginger and garlic.

From cumin seeds to mustard seeds, from curry leaves to coconut, this particular recipe incorporates all the delicious South Indian flavours. Here’s how to prepare this easy dish at home.

Ingredients:

  • 250 grams of French Beans
  • 5-6 tsp Oil
  • 1/4 tsp Mustard Seeds
  • 1/4 tsp Cumin
  • 5-6  Curry Leaves
  • 1 large Onion
  • 1 tsp Ginger-Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1-2 medium Tomatoes
  • 1-2 tsp Red Chilli Powder
  • 1 tsp Koora Karam or Garam Masala
  • 1 tsp Coriander Powder
  • 1 tsp Coconut (dry or grated)
  • 1/2 tsp Garam Masala
  • 2 tbsp Coriander Leaves
  • 3/4 cup of Water
  • Salt to taste

  1. In the first step, take a pressure cooker and heat the oil in it on a medium flame. Once the oil gets hot, add mustard seeds and cumin seeds. Let them crackle 
  2. Once done, put curry leaves as well as chopped onions in the cooker. Saute until all the onions turn soft and change to light brown
  3. Next, put the ginger-garlic paste and stir all the ingredients until the raw smell goes away
  4. Put turmeric powder and saute it as well for 10 seconds. Now put chopped beans and saute them for approximately 1-2 minutes
  5. Now, include chopped tomatoes and stir them until they get soft
  6. It’s time to include all the spice powders now. Add red chilli powder, koora karam (or garam masala), coriander powder and salt as per your taste. Once done stir them properly 
  7. Now, add grated coconut and stir again for a few seconds 
  8. Include 1 cup of water and mix it properly. Pressure cook all the ingredients on a high flame for 2-3 whistles. Once done, switch off the flame and let the pressure release naturally.
  9. Open the pressure cooker and taste the recipe for seasonings. Add more if required as per your taste
  10. Now garnish the recipe with coriander leaves 
  11. Finally, Green Beans Curry is ready to serve hot along with chappatis, parathas or rice

Important Points To Note:

  1. Try to use only fresh and tender beans. They should not be pale. It always takes less time to cook fresh vegetables
  2. You can always adjust the spices in the dish as per your taste
