Thecha is a teekha condiment that is definitely not for the fainthearted. For those who don’t know, thecha is a spicy condiment commonly prepared in Maharashtra, Rajasthan, Madhya Pradesh, and some parts of Karnataka and Andhra Pradesh. Made up of red or green chilies and garlic, thecha also has spices like sesame seeds, cumin, hing, cloves, and grated coconut. Traditionally it was made in stone pastels but now is being made in food processors.  

But can you ever guess that this spicy condiment could be transformed into a scrumptious cheese snack? Neither did we. Recently, Chef Nehal Karkera took to Instagram and shared the recipe of delicious thecha cheese bombs. Indeed, these cheese bombs are for those who love a lot of spice in their food. Thecha Cheese Bombs 

Ingredients 

For the thecha 

  • 3 tbsp oil 
  • 1 1/2 tsp cumin seeds 
  • 7-8 garlic cloves 
  • 1 small piece of ginger 
  • 100gm fresh red chilies or green 
  • Salt to taste 
  • 1/2 cup roasted peanuts 
  • 2 tbsp chopped coriander 
  • Juice of 1 lemon 
  • For the potatoes mixture 
  • 4-5 large boiled potatoes 
  • Salt to taste 
  • 2 tsp garlic powder 
  • 1 tbsp chopped coriander 

Other ingredients 

  • 10-12 cheese cubes 
  • 1 cup maida batter 
  • 2 cups Panko bread crumbs 
  • Oil for frying 

Method 

  • Chopped the red chilies roughly, next heat oil and temper the cumin seeds. 
  • Once they crackle, add garlic, ginger, red chilies & peanuts. 
  • Fry for 3 to 4 min on medium heat, then add the coriander, mix well & remove off the heat. 
  • Let it cool off then add the lemon juice and grind to a dry chutney. 
  • Next boil the potatoes in salted water, once completely boiled, peel the skin and mash it till smooth. 
  • Make sure the potatoes are still warm while doing this. 
  • Add the rest of the ingredients and mix well. 
  • Shape into ball-sized portions and stuff with the thecha and cheese.
  • Now dip them in the maida batter and coat them with bread crumbs.
  • Deep fry in hot oil for 2-3 mins and remove once golden.
  • Serve with a dip of your choice.
