Jam Recipe 

Ingredients: 

1 kg ripe fruit (mangoes, pineapple, mixed berries, strawberries, peaches) 

800 grams granulated sugar 

Juice of 1 lemon (optional, for added tartness) 

1 packet (about 50 grams) powdered fruit pectin (optional, for thickening) 

Method:  

Wash and prepare the fruit, removing any pits, seeds, or stems. Chop the fruit into small pieces and transfer to a large, heavy-bottomed saucepan. 

Add the granulated sugar to the saucepan with the fruit. If using, squeeze the lemon juice over the fruit and sugar mixture. 

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to dissolve the sugar. 

Once the mixture reaches a boil, reduce the heat to low and let simmer for about 30-45 minutes, or until the fruit is soft and the mixture has thickened to your desired consistency. 

If using powdered fruit pectin, sprinkle it over the hot jam mixture and stir well to combine. Continue to simmer for an additional 5-10 minutes to activate the pectin and thicken the jam further. 

Remove the saucepan from the heat and let the jam cool slightly. Transfer the jam to clean, sterilized jars, leaving a little space at the top. Seal the jars tightly and let it cool completely before storing them in the refrigerator.
