For most parts of the world, a hearty and protein-rich breakfast means one thing, eggs. But for those committed to a vegan lifestyle, mornings get a little bit more complicated. There are of course a lot of cereals and readymade protein bars to help you meet your daily requirement, but if you’re looking for something hot and comforting, things tend to get a bit trickier.

That’s where the magic of besan (gram flour or chickpea flour) comes in. With 22 grams of protein per 100 grams of flour. It’s a rich source of the essential nutrient as well as a great source of fibre. In contrast, 100 grams of eggs contain only around 13 grams of protein. But the best part is that it’s so much more than just flour.

In Nepal, there’s a dish called Besan Ko Roti (which is very similar to our own, Besan Chilla), and many people enjoy this dish in the mornings as a substitute for eggs. You can add any fillings or mix of spices that you prefer, for a healthy, delicious start to your day.

Ingredients

  • 1 ½ cup chickpea flour (besan)
  • ¼ cup tomato chopped
  • ¼ cup cilantro chopped
  • ¼ cup red onion chopped
  • 2 tsp chilli powder (optional)
  • 1 tsp turmeric
  • 1 cup water
  • Ghee or oil for cooking
  • Salt to taste

Method

  • Mix all the ingredients in a deep bowl. Add more water if you want a thinner consistency.
  • Heat oil or ghee in a pan over medium-high heat. Add ½ cup of the mixture to the centre of the pan.
  • Immediately spread it around to form a thin circular flatbread shape.
  • Cook on both sides for 2-3 minutes.
  • Remove from the pan and serve with tomato chutney, butter or dahi.
