Ingredients :
- 100 gms Salmon sashimi grade
- 50 gms Cream Cheese
- 2 Whole Cucumbers Persian/Japanese
- 2 tbsp Kewpie Mayo
- 2 tbsp Toasted Sesame Seeds
- 1 tbsp Soy Sauce, if you are using sushi grade salmon
Instructions to make Salmon Cucumber Roll:
- Gather all of the ingredients
- Cream cheese should be cut into 1/2" x 1" pieces and left aside, you will require a total of 12 parts
- Slice a single cucumber into 1/2 x 1 inch slices, then set aside, cucumber can be cut in half lengthwise, then in half again, both directions, to achieve this (the strips should then be cut into lengths of 1 inch), a total of 12 parts are required.
- Salmon should be cubed into 1/2 x 1/2 inch pieces and set aside, 12 parts in total are required
- Make 12 long, thin slices of cucumber using the second cucumber and a mandoline, use a vegetable peeler or knife if you don't have a mandoline, but make sure the slices are thin enough to wrap without breaking
- Sprinkle some Toasted Sesame Seeds sparingly on one side of the cucumbers before turning them over
- In the centre of the cucumber slice, place a piece of salmon and a slice of cucumber
- Top with a squeeze of Kewpie Mayo
- Fold over the thicker end of the cucumber slices first, then the other end, to form a roll
If using salmon that has been prepared for sushi, serve with soy sauce.
