You may have often tried paneer kofta, malai kofta and Nargisi kofta, but have you ever eaten rice koftas? Probably not! Koftas can be of two types, vegetarian and non-vegetarian, but veg koftas are generally more popular. Kofta is an Indian version of meatball; its dry version is known as kebab. You can cook it with multiple delectable options, including cheese and a host of spices. But here, we are talking about rice koftas, so next time you have leftover rice in your house, do not throw but reuse them. Here is the recipe for cooking mouth-watering rice koftas at home! 

Recipe for making Kofta from leftover rice

The amount of material to make kofta depends on the leftover rice and the number of people. But here you need 1 cup of rice. 

Material 

  • 1 cup rice 
  • 2 boiled potatoes 
  • 2 tablespoons gram flour (besan) 
  • 1 teaspoon finely chopped ginger 
  • 1 teaspoon finely chopped green chillies. 
  • 2 tablespoons finely chopped coriander leaves 
  • ½ teaspoon Red chilli powder  
  • 1 teaspoon Amchoor Powder 
  • Salt as per taste 
  • Oil for frying

Preparation of leftover rice kofta 

  1. First of all, grind the stale rice in the mixer and grind it. Now take this mixture to a bowl. 
  2. After this, add boiled potatoes, gram flour, ginger, green chillies, coriander leaves, red chilli powder, mango powder and salt to taste. Now mix them well. If you want, you can also add mawa and crushed nuts, which will improve the taste of the kofta. 
  3. Now make small balls, i.e. Koftas from this mixture and deep fry them. 
  4. When the colour of the koftas turns golden brown, take them out and keep them aside.

For Kofta Curry

  1. You can make gravy with onion and tomatoes (either creamy or spicy). But, first, create a puree and sieve. 
  2. Heat oil and fry it for one minute in a pan. After this, add tomato puree and simmer for five minutes. 
  3. Add rock salt and chilli to it. 
  4. After this, add koftas and garnish them with fresh coriander. 
  5. Rice koftas are best eaten with roti and paratha.
