These days, coffee or a smoothie has become the fuel that keeps everyone running around until lunchtime, leaving us little to no opportunity to enjoy the pleasures of a solid breakfast. French toasts are a quintessential American diner staple that is extremely simple to make and indulgent when topped up with berries, whipped cream and syrup.

This pumpkin French toast recipe is perfect for a sinful weekend treat, when slow and relaxed cooking is in order. The key to making a great French toast lies in buying good bread and infusing it with the richness of cream, milk and winter spices like nutmeg and cinnamon. Using good quality ingredients makes a huge difference in the taste of your final output. If you can’t happen to find canned pumpkin puree for the recipe, just boil or steam some orange pumpkin in a pressure cooker and blitz in a food processor. You can use any kind of bread for the recipe but the ideal varieties would be a rich, eggy brioche or a delicious loaf of day-old milk bread.

  • 3 slices brioche bread
  • 2 eggs
  • ¼ cup milk
  • ¼ cup fresh cream
  • 1 teaspoon cinnamon powder
  • 1 teaspoon nutmeg powder
  • ¼ cup pumpkin puree
  • 1 teaspoon vanilla essence
  • 2 tablespoons raw sugar/honey
  • 1 pinch salt
  • Butter for pan frying
  • Whipped cream, maple syrup for serving

Method:

  • Whisk together the eggs, milk, cream and pumpkin puree into a homogenous mixture and add the vanilla, cinnamon and nutmeg. Once the spices have been thoroughly incorporated, add the sugar and salt.
  • Heat the butter in a shallow frying pan until foamy. Soak the brioche slices in the pumpkin custard for a couple of minutes on each side.
  • Carefully transfer each slice into the foamy butter and cook on medium heat on each side for 3-4 minutes, until the surface starts to brown lightly and get crispy. Using a spatula, remove the French toast slices on to a cutting board and slice diagonally.
  • Arrange the slices on a plate, add a blob of butter and top up with whipped cream, syrup and fruits of your choice. Serve warm.

Note: You can also bake a big batch of these on a sheet tray by preheating the oven to 350 degrees Fahrenheit and baking it for 15 minutes.
