Instructions
- Hard-boil the eggs and peel them. Then, make 2-3 slits on each egg and keep them aside.
- Heat oil in a pan over medium heat. Add chopped onions and fry until they turn golden brown.
- Add ginger paste, garlic paste, and chopped green chillies to the pan. Fry for a minute.
- Add chopped tomatoes and fry until the tomatoes are soft and pulpy.
- Add cumin powder, coriander powder, turmeric powder, red chilli powder, and salt to the pan. Mix well and fry for 2-3 minutes.
- Add 2 cups of water to the pan and bring it to a boil.
- Reduce the heat to low and add the eggs to the pan. Cover the pan with a lid and let it simmer for 10-15 minutes.
- After 10-15 minutes, sprinkle garam masala over the curry and stir gently.
- Garnish with chopped coriander leaves.
- Serve hot with rice or bread.
Tips
- You can adjust the amount of spices according to your taste.
- For a creamier curry, you can add 1/2 cup of coconut milk to the pan after step 5.
- If you want a thicker curry, you can mash a few pieces of boiled egg and add them to the pan after step 5.
