What is Egg Curry?

Ingredients 

  • 6 eggs
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 green chillies, chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 2 cups water

Instructions

  • Hard-boil the eggs and peel them. Then, make 2-3 slits on each egg and keep them aside.
  • Heat oil in a pan over medium heat. Add chopped onions and fry until they turn golden brown.
  • Add ginger paste, garlic paste, and chopped green chillies to the pan. Fry for a minute.
  • Add chopped tomatoes and fry until the tomatoes are soft and pulpy.
  • Add cumin powder, coriander powder, turmeric powder, red chilli powder, and salt to the pan. Mix well and fry for 2-3 minutes.
  • Add 2 cups of water to the pan and bring it to a boil.
  • Reduce the heat to low and add the eggs to the pan. Cover the pan with a lid and let it simmer for 10-15 minutes.
  • After 10-15 minutes, sprinkle garam masala over the curry and stir gently.
  • Garnish with chopped coriander leaves.
  • Serve hot with rice or bread.

Tips 

  • You can adjust the amount of spices according to your taste.
  • For a creamier curry, you can add 1/2 cup of coconut milk to the pan after step 5.
  • If you want a thicker curry, you can mash a few pieces of boiled egg and add them to the pan after step 5.
  • You can also add some sliced potatoes to the curry to make it more filling.

Variations

  • Spicy egg curry - If you like your food spicy, you can increase the amount of red chilli powder and green chillies in the recipe. You can also add some black pepper or cayenne pepper for extra heat.
  • Creamy egg curry - To make your egg curry creamier, you can add some coconut milk or heavy cream to the recipe. You can also use yogurt or sour cream instead of cream for a tangy flavor.
