Rajasthani snacks are a potpourri of savours, from delicious Marwari food to regal and rich delicacies. We have handpicked three of our favourite Rajasthani snacks that you should never miss. Here’re the recipes:

Kalmi Vada

Ingredients:

  1. Green chilli - 2 finely chopped
  2. Salt - according to taste
  3. Turmeric powder - 1 tsp
  4. Cumin powder - 1/2 tsp
  5. Chilli powder - 1/2 tsp
  6. Asafoetida - 1/4 tsp
  7. Gram flour - 2 tsp
  8. Chana dal - 1 cup
  9. Oil - 2 cup

Method:

  1. Soak the gram dal in the water a day before.
  2. The next day, take out the gram dal from the water, put it in a mixer, grind it well, and take it out in a vessel.
  3. Add gram flour, salt, turmeric, etc., to the ground lentils, mix them well and keep it aside for 5-10 minutes.
  4. Now, heat oil in a pan.
  5. After 10 minutes, make vadas from the dal mixture.
  6. Now, fry the kalmi vada in oil.

Mirchi Vada

  1. Red chilli powder - 1/2 teaspoon
  2. Amchur powder - 1/3 teaspoon
  3. Coriander leaves - 2 teaspoon
  4. Green chilli - 10-12 (large)
  5. Salt - according to taste
  6. Boiled potatoes - 2
  7. Fennel - 1 /2 tsp
  8. Besan - 2 cup
  9. Oil - 2 cup

Method:

  1. First, add salt, chilli powder, mango powder, asafoetida, fennel, red chilli powder, coriander leaves to the boiled potatoes and blend them well.
  2. After this, clean the green chillies, cut them in the middle and fill the potato mixture well.
  3. Take another vessel to prepare a thick batter by adding gram flour and light salt.
  4. Now, heat the oil. Dip the green chillies in the gram flour batter and fry them well when the oil becomes hot.
  5. Take it out and keep it in the kitchen tissue to remove the excess oil.

Sattu-Onion Pakoras

Ingredients:

  1. Coriander leaves - 2 teaspoon
  2. Chilli powder - 1/2 teaspoon
  3. Asafoetida - 1/4 teaspoon
  4. Salt - according to taste
  5. Turmeric - 1/2 teaspoon
  6. Ajwain - 1/3 teaspoon
  7. Sattu - 1 cup
  8. Oil - 2 cups
  9. Onion - 2

Method:

  1. First, clean the onion, chop it finely and keep it in a vessel. 
  2. Take another vessel, put the ingredients like sattu, salt, asafoetida, turmeric powder, chilli powder etc., and mix it well.
  3. After this, put the sattu mixture in the onion pot; add little water and mix it.
  4. Now, keep the oil in a pan for heating. After the oil is heated, make pakoras from the mixture and fry them well.
