Rajasthani cuisine is famous for its rich spices and flavours that has now found international acclaim. Most dishes here are made with cereals, pulses and flour instead of vegetables. So, tantalize your taste buds with this extra flavourful special khichdi from Rajasthan. Here’s the recipe!

Ingredients-

  • 1 bowl of moong-chana dal
  • 1 cup rice
  • 2 cups besan
  • 4 cups water ( for khichdi)
  • Salt as per taste
  • 1 tablespoon Turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon cumin seeds
  • Half teaspoon asafoetida
  • Two big tablespoons of ghee
  • Coriander leaves ( for garnishing)
  • Pinch of baking soda ( for gatta)
  • Half cup sour curd

Method for preparation-

  • For making gatta, take a big bowl and add besan, sour curd, salt, asafoetida, cumin seeds and half a tablespoon of turmeric and red chili powder into it.
  • Knead a dough using this mixture and roll it into a thin and long dough.
  • Boil the gatta dough in water. Once they start floating up on the top, take them out. Cut small pieces of gatta and keep aside.
  • Now take a pressure cooker, add ghee, zeera and dal into it. Pour the rest of the masalas and a pinch of salt. Cook this for a while.
  • After some time, add water and rice. Cook again on low flame until you hear 2-3 whistles.
  • Heat a pan with oil, add gatta into the pan and shallow fry them. Make sure to sprinkle some salt, turmeric and red chili powder.
  • Mix the fried gatta with rice. Gatta khichdi is ready!
