Maharashtrian cuisine is marked by its diversity.  The cuisine consists of certain staples such as wheat, rice, jowar, bajri, vegetables, lentils and fruit. Serving vegetables with a pinch of cashews or peanuts is a common custom. Meat is a rare addition, but every Marathi kitchen will have goda masala, kokum, tamarind and coconut. Some examples include ukdiche modak, aluchi patal bhaji, Kande pohe and Thalipeeth. 

There are two types of Marathi cuisine; konkan and varadi. Konkan dishes originate from the coastal influences of Goan, Saraswat, Gaud and Malvani food. The Varadi cuisine is found in the Vidarbha region.

Well-known street food items such as the vada pav and the pav bhaji are loved for their savoury blend of thick bread, spices, butter and patty. The sweet roti or puran poli is a delight made with jaggery (gur), yellow gram (chana) dal, plain flour, cardamom powder and ghee (clarified butter). The kaju kothimbir vadi is a classic fried cashew snack at tea time. The Maharashtrian cuisine is a pleasant mix of diverse flavours.
