The world seem to be in some race of an unseen unknown kind. For decades now, everybody around including you yourself might seem so busy that it seems impossible to take a pause. Or to even take things slow once in a while. Sure, the pandemic did give a rude jolt and an unplanned break to all your plans but then each one of you must already have shaped yourself up to the pandemic's path.

One aspect of life that sees maximum impact due to the availability or the lack of time is the way you cook. The pandemic taught each of you to master everything from street food to eclectic menus at home. But then it also brought in the era of working from home and remote jobs. This called for quick cooking ideas that would be filling yet less time consuming. For me, the grill pan with a heavy bottom turned out to be my fave friend. Grilled Sautéed Veggies


Take all seasonal veggies and chop them roughly. Sauté in butter and season with Italian spices and regular salt-pepper. Add some toasted sesame seeds and let this cook. Shred some regular cheese on it and let it melt somewhat. The heavenly grilled veggies are colourful to look at and packs in a punch of nutrients without any loss while cooking 

Chicken Sliced Salad

Keep chicken breasts marinated in yoghurt and some salt always. Grill a slice on the pan. Add Desi garam masala, usual seasonings and a dollop of butter from time to time to avoid burnt chicken. Cook thoroughly on both sides with the lid on. Sprinkle a dash of lime and have a wholesome lunch.

Crunchy Desi Style Achari Bowl

Add salad veggies such as leafy greens, tomato, potatoes and some sprouts or soaked (boiled) chole or even rajma. Sauté well and add a hint of achar oil for an awesome taste. Sprinkle lime juice and add some roasted papad crumbs and finely chopped cucumber-onion as garnish. Yum!

Grilled Sandwiches 


Get good old regular bread and fill up with some sweet corn and cheese, peanut butter or even some leftover sabzi you have from the night before. Add cheese to anything you consider a stuffing. Add butter and grill the sandwich well on both sides until you get those grilled marks. A sandwich saves your day any time!
