Not only is it a simple, fuss-free dish but also offers a lot of room for creativity and experimentation. From its various types (nearly 350) to its choice of sauces, meats and veggies, pasta allows you to use your imagination. The list of pasta varieties is quite long - from penne and fusilli to ravioli, cannelloni, and more, meaning there’s endless scope for you to play around. However, if you are or planning to turn vegan, the regular pasta may not be the best option for you, as most of these pasta recipes have milk and cheese as main ingredients.

A practice of abstaining from the use of animal products in your diet, veganism has gained immense popularity in the past few years due to environmental as well as health reasons. A quick and easy recipe, which is absolutely free from dairy products, all you need to do here is toss in your favourite veggies and sauce and enjoy.

Ingredients:

  • 100 gm flour 
  • 100 gm semolina/suji 
  • ½ tsp salt 
  • ¾ cup water 
  • 2 tsp olive oil 
  • Turmeric (optional) 

Method:

  • First mix the flour, semolina, and salt in a bowl. Create a well in it and pour water followed by olive oil. Mix well to combine. 
  • Transfer to a working surface and knead to a smooth and soft dough for about 8-10 minutes. 
  • Form a ball of the dough, wrap in a cling wrap and let it rest in the refrigerator for about 30 minutes. 
  • Once refrigerated, take it out and place it on a floured surface and thinly roll it out using a rolling pin. 
  • Dust with as much flour to prevent sticking, and loosely roll it up. Use a very sharp knife and cut the roll into strips. 
  • Use your fingers to unroll the noodles and lay them loosely into several bundles to create noodle nests. 
  • To cook, bring a large pot of salted water to a boil. Add pasta and cook until al dente for about 2-3 minutes.  
  • Toss in your favourite sauce and veggies and enjoy.
