Ingredients
- 1 cup mint leaves
- Handful of coriander leaves
- ½ ginger
- 4 garlic cloves
- 2 tbsp grated coconut
- 1 tbsp coriander seeds
- 2 tbsp oil
- 1 cup rice (preferably basmati)
- 1 cinnamon
- 1 bay leaf
- 3 green cardamoms
- ½ tsp cumin seeds
- 1 tomato
- 1 potato
- ½ cup peas
- Some water
Method
- Take basmati rice and rinse it well. Soak rice in water for at least 20 to 30 minutes. When done, drain the water and put it aside.
- Heat a pan and add oil. Add all the whole spices and cook until they become aromatic. Add sliced onions and cook until they turn golden.
- Now, add the mint paste followed by red chili powder and turmeric powder. Sauté well.
- Add the strained rice and stir. Add the required water and mix well. Add salt as well.
- Cover the lid tightly and pressure cook on high heat till 2 to 3 whistles. When done, Serve Pudina Rice with plain or spiced curd.
