Nothing can match the divine combination of poori and potato curry. Although a simple dish, poori and potato curry is enough to satisfy cravings for a wholesome and delicious meal. Poori Kura is a special, traditional South Indian dish served with fluffy pooris. It is popular in Andhra Pradesh and Telangana. 

The Kura is made with potatoes, which are cut lengthwise, chopped onions, mustard seeds, curry leaves, chana dal, green chilis, a little bit of gram flour diluted in water, sugar, and salt as per taste preference. The method of preparation of the Kura, however, differs. 

For example, in Andhra Pradesh, the Kura is prepared in a simple way while in Telangana, garam masala and ginger garlic paste are added. The Pooris, one the other hand, is made with a combination of maida and rava and the addition of ghee makes it even tastier. This recipe is a classic grandmother’s recipe that can be rustled up in an hour or so.

Serve Poori Kura for lunch, while it can also be savoured as an evening snack along with a hot cup of tea or coffee. 

Here is the recipe for Poori Kura. 

Ingredients:

For pooris:

  • 1 cup maida
  • ⅓ cup chiroti rava
  • Sugar
  • Salt
  • Water
  • Ghee

For kura:

  • 3 potatoes
  • 1 tsp of mustard seeds
  • 1 tsp of chana dal
  • A few curry leaves
  •  3 slit green chillies
  • 1 cup chopped onions 
  • ½ tsp of turmeric powder 
  • 1 tsp gram flour
  • 1 tsp sugar
  • Salt
  • Water

Method:

For pooris:

  • Put the maida, chiroti rava, 1 tsp of sugar, and a pinch of salt, and mix together. 
  • Add enough water, not a lot of it, to make the dough, add 1 tsp of ghee to the dough, and keep aside. 
  • Tear off pieces of the dough and make small and smooth dough balls from it. 
  • Roll the dough balls into pooris. 
  • In half a pan of oil, lower the pooris and fry them, ensuring it puffs up. 
  • Place the pooris on a napkin to absorb the oil.

For kura:

  • Heat 2 tbsps of oil in a pan. 
  • Add 1 tsp of mustard seeds, when it splutters, add 1 tsp of chana dal, add a few curry leaves
  • Add 3 slit green chillies, stir till the chana dal turns a bit brown. 
  • Add 2 chopped onions and stir till the onions turn translucent, add ½ tsp of turmeric powder, and mix well. 
  • Chop the potatoes lengthwise and mix well, add salt to taste and mix well.
  • Add half a cup of water, and mix well. 
  • Cover the pan and let it cook for about 5 minutes. 
  • Then, add one teaspoon of gram flour diluted in a bit of water. Add 1 tsp of sugar and mix everything well. Cover the pan and let it cook for a few minutes.
