Pitas are often cooked at considerable temperatures, ranging from 450 to 475 degrees Fahrenheit. As the dough's water transforms into steam, the pita puffs up to create a pocket. The deflated pita and the layers of cooked dough stay separated as the bread comes out of the oven, so it may be opened to make a pocket. When made in the traditional Greek form, pita is often flatter and ideal for layering into wraps. 

These days, big bakeries use automated lines to make thousands of loaves of pita every hour. Each loaf is cooked for only one minute in ovens that reach temperatures of 800 to 900 degrees Fahrenheit, far higher than conventional clay ovens. Before being exported or kept in commercial freezers, the pitas can air-cool for about 20 minutes on conveyor belts.

Bring some pita bread to the next picnic and wrap the hot dogs in it instead of the usual buns. The flavourful kofta, made with ground beef and seasonings, is another great option to wrap in pita.
