Ingredients

  • 1 1/2 cups chopped pineapple
  • 1 cup semolina
  • 1 Pinch saffron
  • 1 drop of pineapple essence
  • 4 tablespoon ghee
  • 4 tablespoon sugar
  • 1/4 cup raisins
  • 1 handful cashews
  • water as required
  • 1 teaspoon powdered green cardamom
  • For Garnishing

Method

  • Put a deep-bottomed, non-stick pan on medium heat, add the sugar, saffron, pineapple essence, and water, and then stir everything together. Bring the ingredients to a boil while stirring well, then turn the heat down and allow the mixture simmer for a bit until the sugar dissolves. When finished, turn the burner off and set this mixture aside.
  • In the meantime, heat some oil in a nonstick pan that has been placed on another burner. Once the oil is hot enough, place the cashews in it and roast till light brown in colour. After that, add semolina and cardamom powder to the pan and roast the cashews till they are golden brown.
  • Now add the pineapple mixture to the cashew and semolina pan, stir to combine, and check for any leftover lumps. Reduce the heat and simmer the mixture for however long the water takes to evaporate. Add the raisins and stir thoroughly when the water has evaporated.
  • The oil will now begin to evaporate from the pan walls, signalling the completion of the halwa. Transfer it to the serving bowl. Serve hot with pineapple pieces as a garnish.
