Ingredients:

  • 2 cups flattened rice (poha) 
  • 1 large, finely chopped onion
  • 2 finely chopped green chillies
  • 4 - 5 curry leaves
  • 1 teaspoon mustard seeds
  • ½  teaspoon cumin seeds
  • ½  teaspoon turmeric powder
  • 2 tablespoons oil
  • Salt - to taste
  • Lemon juice - from 1 lemon
  • 1 teaspoon sugar(optional)
  • Chopped fresh coriander leaves
  • Peanuts - a handful (optional)
  • Freshly grated coconut - for garnish (optional)

Method:

  • Rinse the poha in a colander under running water for a few seconds. Allow it to drain completely and set it aside.
  • Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds. Once they start spluttering, add curry leaves and chopped green chilies. Sauté for a minute.
  • Add chopped onions and cook until they turn translucent.
  • If using peanuts, add them to the pan and fry until they turn golden brown.
  • Reduce the heat to low. Add turmeric powder, salt, and sugar (if using) to the pan. Mix well.
  • Add the rinsed and drained poha to the pan. Gently mix everything together, ensuring that the poha is evenly coated with the spice mixture. Cook for 2-3 minutes, stirring occasionally.
  • Turn off the heat and squeeze fresh lemon juice over the poha. Mix well.
  • Garnish with freshly chopped coriander leaves and grated coconut (if desired).
  • Serve the Phodnicha Poha hot as a breakfast or snack option. It can be enjoyed on its own or with a side of chutney or yoghurt.
