They say breakfast is the most important meal of the day, but they never said anything about the sheer effort it takes to fix something half-decent. And if you are cooking for your family, things tend to complicate even more. An omelette, is perhaps the easiest breakfast items you can make when you are pressed for time, but eating the same omelette day in and day out can make things a tad boring. This is why, it is a good idea to jazz up your omlette from time to time. Think: greens, meat, cheese, herbs or our humble paneer.  

Paneer or cottage cheese, is an excellent addition to the omelette. Not only does it make the omelette more creamy, chunky and flavourful,  but also adds an additional burst of protein to a breakfast dish synonymous with protein. Protein helps fill you up and build muscle. Simultaneously, it also helps weight loss.

One of the best things about paneer is that you can even tuck it into raw, it is basically curdled milk after all. This makes paneer oh-so-versatile, you can add them to parathas, cutlets, and sandwiches, the options are endless.

In this recipe, all you have to do is heat the pan with olive oil. Toss in about 10 cubes of paneer, scramble it. In a bowl, take the scrambled paneer, add two large eggs, boiled green peas, carrots, salt and pepper. Give it a good whisk.  

Now add a tablespoon of fresh cream. Mix and whisk until the consistency is frothy.

Then heat the pan again and pour the whisked egg mixture. Cook on medium flame only, else you may end up burning your eggs. Sprinkle spring onions, and flip to cook the omelette on both the sides.  

Your paneer omelette is done. Transfer onto a plate. Cut the omelette in two, garnish with spring onions and enjoy with the side of two toasted pieces of bread.  

As is the case with every omelette, you can add or omit the ingredients as per availability or your liking. If you ar not a fan of peas, you can easily remove it from the recipe, or substitute it with peas, maybe?
