Paryushan is a much-celebrated festival by the Shwetambar and Digambar Jain communities. While the Shwetambar Jain community celebrate it for 8 days, the Digambar Jain community celebrate it for 10 days and the 10th day coincides with Anant Chaturdashi. Similarly, the Shwetambar Jains celebrate Paryushan have been celebrating Paryushan from September 12 to September 20. During Paryushan, people belonging to the Jain community keep an intermittent fast which is broken by only one sattvik meal a day before sunset. 

Jain dietary restrictions already restrict the consumption of non-vegetarian foods, tubers, etc. but during Paryushan, the list of foods not allowed also includes green vegetables. Even the water consumed by devotees during Paryushan is boiled before consumption.
