Papdi Gathiya

Ingredients

  1. 2.5 cups gram flour
  2. 1 cup water
  3. oil
  4. Hing
  5. Salt
  6. Baking soda
  7. Black pepper

Directions

  1. In a mixing bowl, put gram flour.
  2. Then, mix the flour, salt, soda, a pinch of asafetida, and black pepper powder, as well as the oil and water.
  3. Make the dough by kneading it. 
  4. Heat the oil in a pan over medium heat.
  5. To make the papadi gathiya, press the dough with a frying spoon and deep fry it until it gets crispy. 
  6. Your papdi gathiya is ready to be served. You can keep it in an airtight container and store it for months.

Papaya Sambharo

Ingredients

  1. Raw papaya
  2. 1 tsp red chilli powder
  3. Salt to taste
  4. 1 tsp sugar
  5. Lemon Juice

Directions

  1. Using a slicer, cut and slice raw papaya.
  2. Then add 1 tsp red chilli powder, 1 tsp sugar, and 1 tsp lemon juice to taste.
  3. Mix all of the ingredients and serve.

Fried Green Chillies

Ingredients

  1. Green chillies ( washed and dried)
  2. 1 tsp Coriander Powder
  3. Cumin Seeds
  4. Salt to taste
  5. ½ tsp Red Chilli Powder
  6. ½ Lemon
  7.  Mustard Oil
  8. 1 pinch Asafoetida

Directions

  1. Slit all of the green chillies by using a sharp knife, 
  2. Add some mustard oil to a pan and heat it for a few minutes.
  3. Saute the asafoetida, cumin seeds, and green chillies for a few minutes.
  4. After that, add salt and stir once more.
  5. After the chiles have roasted for a few minutes, add the coriander and red chilli powders and stir thoroughly.
  6. Cover and cook for another 2-3 minutes.
  7. Mix again after 3 minutes and add lemon juice.
  8. Your mirchi fry is ready to be served!
