Children are often fascinated by different shapes, colours, and sizes, and as a parent, you may have found yourself cutting their sandwiches into star or diamond shapes to encourage them to eat. Adding colourful vegetables can also attract them to a particular meal. Similarly, for breakfast, you can try a new idea by combining two breakfast favourites: pancakes and cereal. The pancake cereal is a perfect breakfast option for kids, as the bite-sized pancakes can be prepared from the same batter and served in a bowl of milk. You can top it with fruits, berries, syrup, butter, and more to enhance the flavour.

If you want to make pancake cereal at home, here's how to do it:

Ingredients:

    3 large eggs

    2 tablespoons coconut flour

    2 tablespoons almond butter

    1 teaspoon vanilla extract

    2 tablespoons unsweetened almond milk

    Maple syrup

    1/2 teaspoon baking powder

    1/2 teaspoon baking soda

    1/2 cup chopped cherries

    3 almond butter cubes

Method:

To begin, start by whisking the eggs in a bowl.

Next, add almond butter, baking powder, and baking soda.

Combine it well and add coconut sugar to it.

Once the pancake batter is ready, pour it into a zip-top bag with a cutout corner.

Use this corner to pour droplets of pancake batter onto a preheated pan.

Flip your pancakes and cook them on both sides.

Finally, take them out in a cereal bowl and add your choice of toppings, like cherries.

Finish off with a drizzle of maple syrup, almond milk, and a cube of almond butter.
