Sundubu Jjigae

Jjigae is a stew with many varieties that belongs to Korean cuisine. Sundubu Jjigae is a wholesome spicy tofu stew. It's healthy as it includes everything from tofu to fish and egg. As mentioned, you can replace Korean ingredients with some Indian substitutes. You can use paneer (if that's easy and tastier for you) instead of tofu and normally used Indian spices instead of Korean spices.

Ingredients ( for two-three servings)

  1. Soft tofu- 350g
  2. Cleaned littleneck clams or pipis -110g
  3. Banana prawns- 3 to 4
  4. Enoki mushrooms- 100g (stem removed and cleaned)
  5. Small shiitake mushrooms- 20g (stem removed, cleaned, and thinly sliced)
  6. A stalk of green onion (thinly sliced)
  7. An egg

For the soup base, you require:

  1. Dried kelp and anchovy stock -1.5 cups 
  2. Korean chili oil or neutral cooking oil- 1 tbsp
  3. Korean fish sauce- 1/2 tbsp
  4. Korean soup soy sauce or regular Kikkoman soy sauce- 1/2 tbsp
  5. Korean chili powder or Korean chili flakes (gochugaru)- 2 tbsp 
  6. Minced garlic- 1 tsp
  7. Ground black pepper to sprinkle
  8. Sesame oil- 1/2 tsp
  9. Salt

Directions:

Heat a pot on the stove over medium flame. Put the chili oil, chili powder, and garlic. Stir well for a minute. Now add the clams and shrimps, stir quickly to coat them with the chili sauce. Add fish sauce and soy sauce and mix. Add the dried kelp and anchovy stock. Boil it for around 2-3 minutes. Add the tofu, mushrooms, and egg and cook them for 2-3 minutes. You can add salt. Top with green onion, black pepper, and sesame oil.  

Korean Ramyeon

Ingredients

  1. A Korean ramyeon/normal ramen packet
  2. Water- 2½ cups
  3. An egg
  4. Green onions- 2 (chopped)

Directions:

Boil water and add the noodles and soup powder provided with it. Cover for one minute. Open and serve in your favourite bowl.
