Ingredients:
- 4 tsps butter
- 1 small yellow onion (chopped)
- 3 stalks of celery (diced)
- ½ cup carrots (diced)
- 3 garlic cloves (minced)
- 1 tsp dried thyme
- ½ tsp ground mustard
- ¼ tsp ground cumin
- ¼ tsp cayenne pepper
- ¼ cup all-purpose flour
- Salt and pepper, to taste
- 4 cups chicken broth
- 12 ounces of egg noodles
- 3 cups cooked, shredded chicken
For the topping:
- 2 tsps butter (melted)
- 1 cup panko breadcrumbs
- 1 tsp chopped parsley (dried or fresh)
- A pinch of salt
Method:
- Melt some butter in a large pan over a low-medium flame.
- Next, add diced carrots, celery, and onion to the pan and stir to coat all the vegetables with butter.
- Cover the pot with a lid and allow the vegetables to cook for a while.
- Stir the ingredients often until cooked properly.
- In this step, remove the lid and put the garlic in the pot.
- Now, stir all the ingredients constantly for approximately 30 seconds.
- Include thyme, ground mustard, cumin, cayenne, flour, salt and pepper to taste in the pot and mix them.
- Cook all the ingredients and stir constantly for approximately 2 minutes so that the flour is cooked properly.
- Next, pour the chicken broth slowly into the pan, while stirring constantly until the batter gets smooth.
- Include the noodles and shredded chicken in the pan.
- Simmer, stirring often so that the noodles get merged under the broth until cooked through. It will take approximately 8-10 minutes.
- Preheat the oven to high.
- Blend the melted butter in a small bowl with the panko, parsley, and salt as per your taste.
- Now, top this casserole with the breadcrumb mixture and broil for approximately 2-3 minutes until it gets golden brown.
