Ingredients: 

2 cups of drumstick leaves (moringa leaves), washed and cleaned 

1 tbsp oil 

1 onion, chopped 

2 cloves of garlic, minced 

1-inch piece of ginger, grated 

4 cups vegetable or chicken broth 

Salt and pepper to taste 

Optional: spices like turmeric, cumin, or coriander for added flavor 

Method: Begin by heating a high-quality oil in a strong pot set over a medium flame. Incorporate the finely diced onion and sauté until it reaches a translucent consistency. Incorporate the finely chopped garlic and grated ginger into the cooking vessel. Gently stir the ingredients in the pan and allow them to cook for a brief moment until their fragrant essence is released. Incorporate the drumstick leaves into the pot and sauté them for a brief period until they wilt and decrease in size. Add the vegetable or chicken broth to the mixture, incorporating any preferred seasonings. Be sure to properly season with just the right amount of salt and pepper to enhance the flavours to your liking. Thoroughly incorporate all the components by stirring with finesse. First, we need to bring the soup to a rolling boil, and then we'll want to lower the heat to a gentle simmer. After covering the pot, let it cook for approximately 15-20 minutes to allow the flavours to blend harmoniously. Once the prescribed cooking time has passed, carefully extract the pot from the heat source and allow it to cool down to a moderate temperature. 

To achieve a velvety texture, either transfer the soup to a blender or utilise an immersion blender to blend the mixture until it reaches a smooth and creamy consistency. To achieve the desired texture, consider incorporating additional broth as necessary. 

Once the soup has been strained, it is recommended to transfer it back into the pot and gently reheat it to the desired temperature before serving. Carefully evaluate the flavour profile and make any necessary adjustments to the seasoning. To serve the Moringa Leaves Soup, use a ladle to carefully pour it into individual bowls. For an added touch of flavour and presentation, consider garnishing with a sprinkle of fresh herbs or a light drizzle of high-quality olive oil. 

Note: If you don’t have drumstick leaves you could any other Keerai (amaranth leaves) stem, which otherwise is usually discarded.
