A type of stir-fried noodles, originated from China, combines vegetables and optionally meat, Chowmein is a popular street snack as well as a main menu item in restaurants of India. Even the word Chowmein translates to Chow as in stir-fried and mein as in noodles. A lot of variants and toppings are made over the years by using different or special vegetables or non-vegetarian items and a number of toppings. In India, Bangladesh, Pakistan, chowmein is often offered as Hakka style, i,e., gravy style. Cabbage, bamboo shoots, pea pods, green peppers, and carrots are common vegetable ingredients added to chowmein.
Process to Prepare Veg Chowmein No Garlic No Onion
The process of making Veg Chowmein includes boiling the noodles with some salt and oil so that it comes out soft. This is followed by adding sautéed vegetables of one’s choice without the use of garlic and onion.
Ingredients:
For Boiling Noodles
- 200 grams Noodles
- 1 tablespoon Oil
- 1 teaspoon Salt
Vegetables for Sauteeing
- ½ cup shredded Cabbage
- ½ cup shredded Green Capsicum
- ½ cup shredded Carrot
- ½ cup shredded Red Capsicum
- 2 tablespoon Oil
- 1 teaspoon grated Ginger
- 1 teaspoon chopped green Chilli
- 1 tablespoon Soya Sauce
- 1 tablespoon Vinegar
- 2 tablespoon Schezwan Sauce
- 2 tablespoon Tomato Sauce
- ¼ teaspoon crushed Black Pepper
- Salt as per taste
- Coriander Leaves
Method:
- In a vessel, keep four cups of water to boil; in it, add one teaspoon salt and one teaspoon oil
- Add 200 grams of noodles in the boiling water; let noodles cook in water for five to seven minutes
- Check for its doneness by cutting it with knife easily and seems soft
- Turn off the flame
- Quickly sieve the noodles and keep the sieve on the empty bowl. Pour cold water on the noodles, followed by some oil
- Allow the noodles to cool for some time while sautéing can be done
- Wash the required vegetables: half Cabbage, half Green capsicum, half carrot, half red capsicum
- Shred long pieces of each of these vegetables. Also, chop green chillies
- In a wok, put two tablespoons of oil and heat. Brush the oil all along the sides of the wok
- Add one teaspoon of grated ginger, one teaspoon of finely chopped green chillies to the oil and let it fry for a minute on high flame
- Now, keeping the flame high, add vegetables and stir continuously for a minute
- Add the sauces and spices: one tbsp of soy sauce, one tbsp of vinegar, two tbsp of schezwan sauce, two tbsp of tomato sauce, three-fourth tsp of salt and one-fourth tsp of coarsely ground black pepper
- Mix everything for a few more minutes
- When the vegetables are done, add boiled noodles and mix. See that the noodles don’t break while mixing, so use light hands
