Ingredients:

  • 1 cup Sama Rice
  • ½ cup Thick yoghurt
  • 1 tsp Unsweetened desiccated Coconut
  • 1 tsp Lemon Juice
  • 1 tsp Roasted cumin seeds
  • ½ tsp Crushed red chilli flakes
  • 2 tsp Finely chopped Carrots
  • ½ tsp Citric acid
  • ½ tsp Eno (fruit Salt) or 1.5 tsp Baking powder
  • Salt to Taste (Sendha Namak)
  • Oil to Grease idli moulds

Method:

  • In the first step, rinse sama rice or barnyard millets with water thoroughly. Transfer sama rice to a bowl and include enough water to soak the rice properly. Soak rice for approximately 2 hours
  • Once the rice is soaked, drain them and transfer it to a food processor
  • Now, include other ingredients coconut, yoghurt, lemon juice, carrots and spices into a blender and grind them properly to form a smooth paste
  • Take a pan and heat it on a low flame. Add water to this steamer pan. Once done, lightly grease the idli moulds with oil
  • Next, add citric acid and ENO to the idli batter before pouring this batter into the steamer. Once done, whisk the batter for approximately 2-3 minutes until combined and frothy
  • In this step, spoon this sama rice batter into the greased idli moulds nicely
  • Next, put the filled moulds in the steamer pan and cover them with a lid. Steam-cook the idlis for approximately 6-8 minutes
  • Once the idli is cooked properly, insert a toothpick and check if it steamed nicely. The toothpick should come out clean
  • Next, carefully remove the hot idli moulds from the steamer pan. Leave it aside to cool down for a few minutes. Once done, gently remove the idlis from each mould using the back of a spoon
  • Finally, Vrat idli is ready to serve hot along with vrat coconut chutney
