With just a day to go for Navratri 2021, we know you must be busy preparing for one of India’s most loved festivals. From the fun-filled Dandiya night to the rituals, Navratri comes with a plethora of exciting festivities. And like any other Indian festival, Navratri too comes with a varied and decadent food fare. Despite certain dietary restrictions, Navratri's fast course includes a variety of culinary gems. The food prepared without grains, onion and garlic and normal salt are distinctive in terms of flavours and textures. Preparing these dishes isn’t a difficult task especially for breakfast, lunch and dinner. But difficulty intensifies while thinking about evening snacks as we are acquainted with eating something chatpata. So, to get you covered by satisfying your cravings during Navratri here’s a Vrat-friendly Samosa recipe. Try it out this Navratri season and thank us later.

INGREDIENTS
For the dough
· 1 cup Singhare ka atta
· ¼ cup arrowroot
· ½ cup ghee
· 1 tsp rock salt
· Water, as required
For the filling
· 1 cup Chironji
· 1 tsp rock salt
· 1 tsp red chilli powder
· 1 tsp jeera
· 1 tsp dhaniya powder
· ½ tsp cardamom powder
· ¼ cup ghee
METHOD
1. Clean the Chironji by removing the husk and grind to make a coarse powder.
2. In a pan, add ghee and jeera. Once the jeera starts spluttering, add the ground Chironji and mix well to combine.
3. Add the rest of the ingredients mentioned for the filling and fry the mixture for 5-6 minutes. Once it is done, remove it from the heat and allow it to cool.
4. In another pan, add water, ghee and salt and bring it to a boil.
5. Add Singhare Ka Atta along with arrowroot and mix well to form a dough.
6. Take the dough off the heat and allow it to cool.
7. Once the dough has cooled down, roll it into medium-sized rotis and cut them into halves.
8. Take one half circle and wet the edges. Press the edges together to form a cone.
9. Fill the cone with a tablespoon of filling and seal the edges together to make Samosas.
10. Heat ghee in a Kadai and once the ghee is hot add 3-4 Samosas.
11. Lower the flame to medium and fry the Samosas till they are cooked.
12. Remove the Samosas from the Kadai and place them on a paper towel to remove excess oil.
