Mutton Pulao, also known as Kabuli Pulao, is an Afghani delicacy which is prepared with 2 ingredients mainly, mutton and rice. Rich in flavours, Mutton Pulao is a complete meal which can be made for lunch or dinner. The recipe can be prepared in many varieties but the basic ingredients remain the same. This dish has a wonderful fragrant aroma of cardamom, cloves, and cumin. Also, the juicy, tender and succulent pieces of mutton in this recipe make every bite delicious. 

The origin of the dish belongs to the homes of Indians and Pakistanis. The simple recipe is a good meal option for bachelors and those who don’t know cooking well. Mutton Pulao can also be easily packed in lunch boxes.

Mutton Pulao can be prepared spicy as well as mild as per your taste. It tastes well when served with raita. The recipe can be prepared in an instant pot or by using a pressure cooker.

Here’s the recipe for Mutton Pulao.

Ingredients:

  • 500 gms mutton
  • 20 gms ginger
  • 5 cloves of garlic (chopped)
  • 3 litre water
  • 1 tsp crushed chillies
  • 2 tsp salt
  • 1 tsp peppercorn
  • 2 cumin seeds
  • 1 tsp black pepper
  • 2 onions (chopped)
  • 10 cloves
  • 2 bay leaves
  • 4 black cardamoms
  • 400 gms rice
  • 2 tsps garlic paste
  • 3 green chillies
  • 1 tbsp water
  • 50 ml oil
  • Raisins

Method:

  • Take a bowl and put the rice in it. 
  • Cover it completely after pouring cold water into them. Once done, leave it to soak for at least 1 hour.
  • Take a pan and put mutton in it. Add water and cook for approximately 30-45 mins until the meat has softened.
  • Once the mutton is almost ready, keep it aside for a while.
  • In this step, take another pan and put oil on it. 
  • Heat the oil on medium flame and then put the finely sliced onions and cook them for approximately 3-4 mins until softened and browned. 
  • The moment the onion turns lightly browned put 1 tbsp of water to it, so that the colour form of the onion is released. 
  • Now, add these onions along with the garlic paste, salt, and green chillies to the mutton pot then cook it for approximately 5-10 mins.
  • Next, drain the soaked rice and add it to the pan then gently combine them.
  • Cook them on a high flame for approximately 10-15 mins until the water has almost dried up. 
  • Once the water dries up, reduce the heat to low flame and then cover it with a lid and cook for another 10-15 mins.
  • Garnish the recipe with raisins and fried onion.

Your Mutton Pulao is ready to be served along with raita, papad, and onion.
