- 1/2 tsp garam masala

- 1/2 cup yoghourt

- Fresh coriander leaves for garnish

- Salt to taste

- Cooking oil or ghee (clarified butter)

Instructions

1. Marinating the Mutton

- In a bowl, mix the mutton with yoghourt, ginger, garlic, and half of the red chilli powder. Allow it to marinate for at least 30 minutes to tenderise the meat and infuse it with flavour.

2. Preparing the Spices

- In a heavy-bottomed pan or a pressure cooker, heat a few tablespoons of oil or ghee. Add the bay leaves, cloves, green cardamom pods, and cinnamon sticks. Sauté them until they release their aroma.

3. Sautéing the Onions

- Add the finely sliced onions and green chilies to the pan. Sauté them until they turn golden brown and become caramelised. This step is crucial as it forms the flavorful base of the curry.

4. Adding the Tomatoes and Spices

- Once the onions are nicely browned, add the chopped tomatoes, remaining red chilli powder, turmeric, cumin powder, coriander powder, and salt. Cook the mixture until the tomatoes turn soft and the oil begins to separate.

5. Cooking the Marinated Mutton

- Now, add the marinated mutton to the pan. Cook it on high heat, stirring occasionally, until the mutton starts to brown.

6. Pressure Cooking (Optional)

- If you're using a pressure cooker, transfer the contents to the cooker at this stage. Add a little water, secure the lid, and cook until the mutton is tender (usually takes 3-4 whistles). If you're using a pan, continue simmering the mutton on low heat until it becomes tender, adding water as needed.
