This dish is believed to be named after the formidable 13th-century Mongolian warrior Genghis Khan, or Changez Khan as Indians prefer to call him. He was very cautious about the amount of spices he used in his cuisine. One of his chefs experimented with the chicken dish to fit his preferences, and the king was impressed. This dish was made using milk and cream, which helped to balance out the spicy flavour. Korma (or qorma) is a South Asian dish that consists of meat or vegetables cooked in a thick sauce or gravy with yoghurt (dahi), water or stock, and spices. Korma has its origins in the Indian subcontinent of Mughlai cuisine. It is a traditional Mughal dish that dates back to the 16th century and the Mughal invasions of the region. A korma's flavour comes from a combination of spices, such as ground coriander and cumin, coupled with yoghurt held at a temperature below curdling and blended slowly and delicately with the meat juices.

Ingredients

  1. Curd
  2. Ginger Garlic Paste
  3. Coriander Powder (Dhania)Cumin powder (Jeera)
  4. Salt to taste
  5. Turmeric powder 
  6. Kasuri Methi
  7. Kashmiri Red Chilli Powder
  8. Oil
  9. 750 grams of Chicken
  10. Ginger, finely chopped
  11. Garlic, finely chopped
  12. Tomato puree
  13. 2 Onions, chopped
  14. Red Chilli powder

Directions

  1. After cleaning the chicken, pat it dry and pierce it with a fork to begin creating the Chicken Changezi dish. This aids in the penetration of the marinade into the chicken.
  2. To marinate the chicken, mix it with dahi, ginger garlic paste, coriander powder, cumin powder, salt, turmeric powder, kasturi methi, and Kashmiri red chilli powder in a mixing bowl and marinate for 3-4 hours.
  3. In the same pan, heat the oil. When the oil is hot, add the marinated chicken pieces and roast for 10 minutes over medium heat.
  4. Transfer to a bowl and put aside.
  5. In a pan, heat the oil. Sauté ginger, garlic and onions.
  6. Add tomato puree turmeric powder, chilli powder, and salt.
  7. Stir to mix. Cook for 7-8 minutes, or until oil separates.
  8. Add all the spices. Put the roasted chickens and mix well.
  9. Add 1/2 cup water and stir to cook. After that, cover and simmer until the chicken is tender.

Chicken Korma

Ingredients

  1.  Chicken
  2. 1 cup oil
  3. Ghee
  4. Cardamoms
  5. Cloves
  6. Garlic
  7. Coriander powder
  8. Chilli
  9. Salt
  10. Ginger paste
  11. Yoghurt
  12. 2 onions
  13. Garam masala
  14. Few strands of saffron
  15. Coriander leaves

Directions

  1. Place a dollop of ghee in the pan after heating the vegetable oil.
  2. Add some cardamom, cloves, and garlic and cooked well.
  3. After that, add the chicken and simmer for another 2-3 minutes.
  4. Continue to stir it.
  5. Add coriander and chilli powder once it has turned brown.
  6. In another pan, fry some onions until they get golden brown.
  7. Add ginger-garlic paste, fried onions and yoghurt to the chicken.
  8. For taste, add garam masala and saffron.
  9. If the gravy is excessively thick, thin it out with a little water before covering it. Mix the masala and the chicken.
  10. Cover it and cook it on low heat for a while. Allow for 10-15 minutes of simmering time.
