A dish whose history dates back to 1500 in the Aztec Empire in Central America is made from Avavado, which are native of Mexico and Central America, is highly appreciated worldwide for its health and wellness properties. It was seen that Aztecs loved their avocado-mixture. Made with ripe avocados, fresh tomatoes, aromatic garlic onions, cilantro and lime juice, this nutritious, delicious makes for one of the quickest spreads at home. This green spread made with sees the goodness of al vitamins and nutrients and more. Interestingly many of the ingredients used in making guacamole like tomato, and onions are native to the America. 

Like any other dish that has been Indianized so has been Guacamole. With Avacado not really being an Indian vegetable, chefs have started to look inwards and are experimenting with vegetables are more Indian like Parwal, Snake Gourd and more. This  quick, easy, healthy, and naturally vegan and gluten free using local vegetables is a great as an avacado substitute. This particular recipe has all the ingredients that go in a classic authentic guacamole, and a few added flavorings, to make an Indian style guacamole dip

Chef Chinu Vaze shares the recipe of Snake Gourd Padwal or Lauki or Chichinda. She says "Anyway whatever it is, this is a fantastic alternative to Guacamole when your avocado isn’t ripe enough or it isn’t in season or it’s been wrapped in newspaper for years and shows no signs of ripening or if you just think what is the big deal about this avocado and why the hell is it so expensive (Hass I’m looking at you!)

Laukamole

2 snake gourd (1 - 1/2 cup)

Pinch of sugar & salt while steaming

2-3 roast garlic pods

2 tbsp hung curd

1 lemon juice

2 tbsp tomato

1 tbsp onion

2 tbsp coriander

1-2 bird eye chillies

Method-

1. Wash, chop and steam snake gourd for 5-10 minutes. Sprinkle with a pinch of salt & sugar while steaming to keep the colour.

2. Let it cool down and purée in this mixer. Or smash with a fork.

3. Add all the rest of the ingredients and chill.

Eat with nachos, we ate it with pulled pork burritos, it’s delicious!!
