The Japanese term "bento" refers to a lunch box. Bento cakes are little cakes that measure 3 to 4 inches in diameter and weigh 250 to 300 grams, making them enough for two people. Bento Cake Recipe For Mother's Day

Here's an easy bento cake recipe to surprise your mother:

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • Pinch of salt
  • Food colouring (optional, for tinting batter)
  • Buttercream frosting (homemade or store-bought)
  • Assorted fresh fruits (strawberries, kiwi, blueberries, etc.)
  • Fondant (optional, for decorations)
  • Edible flowers or decorative elements (optional)

Method:

  • Set the oven's temperature to 175°C/350°F. Oil two 9-inch circular cake pans.
  • Beat the softened butter and granulated sugar together in a mixing bowl until frothy and light. One egg at a time, adding and beating well after each addition. Add the vanilla essence and stir.
  • Mix the baking powder, salt, and all-purpose flour in a separate bowl. Stir this dry mixture into the liquid ingredients one at a time, starting with the milk, until a smooth batter forms.
  • If you wish to use different colours, divide the batter into smaller dishes. Mix food colouring into each bowl until the desired tones are attained.
  • Pour the coloured batters into the prepared cake pans and spread them evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the centre comes out clean. Remove the cakes from the oven and allow them to cool fully.
  • After the cakes have cooled, level them as needed to achieve flat surfaces. Arrange one cake layer on a serving dish or cake board.
  • Spread a layer of buttercream frosting on top of the initial cake layer. Place slices of varied fresh fruits on top of bento box-like sections. Add the second cake layer on top.
  • Use fondant to make ornamental pieces like as flowers, hearts, and other forms. Arrange them on top of the cake, along with edible flowers or other embellishments.
  • Refrigerate the bento cake for approximately 30 minutes to allow the icing to harden. On Mother's Day, slice and serve to enjoy your gorgeous and tasty handmade masterpiece.
