Matki beans, also known as moth beans, are a small oblong-shaped legume that is a staple meal in most parts of India. Moth beans come in a variety of colours, including brown, reddish brown and green, and are high in protein. The legume is used in a variety of recipes, including Maharashtra’s misal pav and Agra’s dalmoth, among others. Chef Kunal Kapoor, a culinary expert, can be seen teaching how to sprout moth beans in a video that recently surfaced on Instagram.

Ingredients:

1 cup whole matki beans, moth dal

Method:

Soak the moth dal in water for 3-4 hours after washing it.

Drain the water and spread the wet dal out on a towel, ideally muslin.

Make a potli out of this cloth by tying all the corners together and dipping it in enough water. Allow enough time for it to soak up the water.

Now, hang the potli where the dripping water can pass through.

Keep it overnight at least for two days.

Your sprouted moth dal will be ready. 

Make masala moth sprouts if you want to try something new

Ingredients:

3/4 cup sprouted moth beans, matki

1.5 tbsp sprouted or boiled black chickpeas, kala chana

3/4 cup chopped tomato

1 tsp chopped ginger

1 tsp coriander powder

1 tsp chilli powder

3/4 tsp turmeric powder

1/4 tsp black salt

Salt as per taste

1.5 tsp lemon Juice

3 tbsp fresh coriander leaves

For tempering:

2 tbsp cooking oil

1 tsp cumin

1/4 tsp asafoetida, hing

1 tsp Chopped, green chilli

A few curry leaves

Method:

Heat oil in the pressure cooker and add cumin seeds. As it begins to crackle, add asafoetida, chopped green chilli, ginger and curry leaves. Give it a good stir.

Now add the chopped tomato and salt and cover with a lid and let it cook on low heat.

Check, once the tomatoes are soft then add all the dry spices and stir.

Now, add the moth sprouts and kala chana and stir to mix well

Then, add 3/4 cup water and mix well.

Close the cooker and pressure cook for 3 whistles on medium heat.

When the pressure cools down completely then open the cooker and add lemon juice and fresh coriander.

Mix well and serve hot or cold.
