Nearly all Indian kitchens have fenugreek, popularly known as methi. It can be utilised in a variety of ways, whether it's methi dana, fresh, spicy leaves, or scented fenugreek powder. We have embraced this modest ingredient in all of its forms since it has a distinctive aroma, enthralling flavour, and a variety of health benefits. Fenugreek can be used to make some of the simplest yet most delicious foods. It comes in a variety of forms, from the amber-colored seeds and dried leaves (kasoori methi) to powdered powder and garden fresh saag.  

This Gujarati sabzi, Methi Gathiya nu Shaak, is an inspiration from by Sev Tomato Sabzi. It is a must have since this time of year is when you can find the freshest Methi (fenugreek leaves). To improve the flavour of this sabzi if you can't find gathiya, use ordinary sev or any other Farsaan. Given that cooking this sabzi only takes five minutes, methi is a great addition to your daily diet and provides a number of health benefits.

Ingredients: 

2 tsp Oil 

1 tsp Cumin Seeds (Jeera) 

Finely chopped Green Chillies (as per taste) 

2-3 finely chopped Garlic Cloves 

Pinch of Asafoetida Powder (Hing) 

1 tsp Turmeric Powder (Haldi) 

1.5 tsp Red Chilli Powder 

2 tsp Cumin Powder (Jeera Powder) 

3 finely chopped medium Tomatoes 

Salt as per taste 

1/2 tsp Garam Masala 

Pinch of Sugar (optional) 

2 cup finely chopped and nicely cleaned Fresh Fenugreek (Methi) 

1/2 cup Gathiya 

Method:  

Heat 2 tsp Oil in a pan. Add 1 tsp Cumin Seeds (Jeera) let it splutter. Now add finely chopped green chillies (as per taste). Add 2-3 finely chopped Garlic Cloves and  a pinch of Asafoetida Powder (Hing), 1 tsp Turmeric Powder (Haldi), 1.5 tsp Red Chilli Powder and 2 tsp Cumin Powder (Jeera Powder). Fry well and add 3 finely chopped medium Tomatoes. Add Salt as per taste. Let the oil separate from the sides of the pan. Add ½ tsp Garam Masala a pinch of Sugar (optional) and 2 cup finely chopped fresh Methi. Mix it well to combine all the flavours and keep it on slow flame. Let it cook for 3-5 minutes. Add a little water, cover the lid and let it cook till its soft and mushy. Turn off the heat once cooked. Add 1/2 cup Gathiya and mix it gently. Serve it warm with roti, puri, paratha or khakra.
