Ingredients:

For Kombdi (Chicken Curry):

500 grams of chicken, cut into pieces

2 onions, finely chopped

2 tomatoes, pureed

2 tablespoons Malvani masala (a blend of coriander, cumin, peppercorns, cinnamon, cloves, and dried red chillies)

1 tablespoon ginger-garlic paste

1 teaspoon turmeric powder

1 teaspoon red chilli powder

1 tablespoon tamarind paste

1 cup coconut milk

Fresh coriander leaves for garnish

Salt to taste

Oil for cooking

For Vade (Rice Flour Puris):

1 cup rice flour

1/4 cup finely chopped onions

1 tablespoon chopped coriander leaves

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/2 teaspoon red chilli powder

Salt to taste

Oil for deep frying

Instructions:

  1. In a large pan, heat oil and sauté the chopped onions until golden brown. Add ginger-garlic paste and cook for another minute.
  2. Add the chicken pieces to the pan and cook until they turn slightly brown. Add the tomato puree and cook for a few more minutes.
  3. Add Malvani masala, turmeric powder, red chilli powder, and salt to the chicken. Mix well and cook for a couple of minutes to allow the spices to blend with the chicken.
  4. Pour in the tamarind paste and coconut milk. Stir everything together, cover the pan, and let the chicken simmer on low heat until tender and cooked through.
  5. Meanwhile, prepare the Vade. In a mixing bowl, combine rice flour, chopped onions, coriander leaves, cumin seeds, turmeric powder, red chilli powder, and salt. Gradually add water and knead the mixture into a soft dough.
  6. Divide the dough into small portions and roll them into discs, around 3-4 inches in diameter.
  7. Heat oil in a deep pan for frying. Fry the Vade one at a time until they turn golden and crispy. Remove and drain excess oil on a paper towel.
  8. Once the chicken is cooked, garnish the Kombdi with fresh coriander leaves.

Instructions for Solkadi:

  1. In a mixing bowl, combine the coconut milk, kokum extract, finely chopped green chilli, cumin seeds, asafoetida, and salt. Mix well until all the ingredients are well incorporated.
