While it may sound like quite a feat but if you try to cook at home and tweak the recipe into a healthier version, you can achieve taste and health both at the same time. In this article, we’ll see the recipe of Malvani Chicken Fry by Chef Mohit in collaboration with Masala Tokri, which is absolutely delicious and super healthy. So, let us get on the journey of slow cooking and fast learning.

Ingredients

  • 2 tbsp (approx 30 grams) masala tokri malvani meat masala
  • 1/2 tsp tamarind paste (optional)
  • 500 grams chicken on the bone
  • 1 tsp Kashmiri red chilli powder
  • 3 tbsp ginger garlic paste
  • 1 tbsp coriander powder
  • 1/2 tsp yoghurt
  • Salt (to taste)

Instructions

  1. First, clean the chicken thoroughly.
  2. Make marination of all the above-listed spices into a thick paste.
  3. Make gashes on the chicken so the chicken marinades well
  4. Add the above marination to the chicken and mix well
  5. Rest for 15-20 mins
  6. Meanwhile, heat oil to shallow fry /deep fry
  7. Coat the marinated chicken either in rice flour or fine rawa
  8. Fry the chicken for 9-10 minutes if shallow frying or 7-8 minutes if deep frying
  9. Also, add long slicked onion and curry leaves to the oil. Serve on top of chicken
  10. Finally, serve hot with green chutney and lime.
