The country-style beef roast, which is prepared in iron pans with a lot of curry leaves, has an incredible flavour and scent. It is such an exquisite dish that, be it a roadside stall or a star hotel, you will find the same love and authenticity given to its preparation.

The slow cooking of the beef in coconut oil with ginger, garlic, and spices is the centrepiece of this dish. It is topped with fried curry leaves and browned coconut bits after it has been well blended and turned aromatic. In terms of preparation and spice use, the dish is quite similar to the beef curry recipe, except for the extended roasting time.

Ingredients:

1 kg beef

4 Onion

1 Ginger

9-10 tsp garlic

4-5 Green chillis

3-4 sprigs curry leaves

2 Tomatoes

4-5 Dry red chilli

1 ½ tsp red chilli powder

½ tbsp. turmeric powder

1 tsp pepper powder

 1 tsp coriander seed

 1 tsp fennel seed

1 Cinnamon

 1 tsp mustard seed

Method

. Take a bowl, add the beef chunks, the red chilli powder, and the turmeric powder, and stir to combine. Marinate for 30 minutes.

. Dry red chillies, coriander seeds, oil, and curry leaves are added to a hot skillet and sauteed for a little while before being left aside.

. Onions should be finely diced and added to hot oil in a pan.

. Then combine water and the meat pieces that have been marinated.

. Cook the meat, covered, until it starts to soften.

. Ginger and garlic should be finely ground into paste.

. Then make a fine paste out of the fried components, such as coriander seeds and dry red chilli powder, and leave it aside.

. Fennel seed and cinnamon are again ground into a fine paste and set aside.

. When the mustard seeds begin to sputter in the hot oil, add them.

. Add the chopped tomatoes, chopped onion, curry leaves, green chilli, and crushed ginger and garlic paste. Sauté the ingredients until they soften.

. Garam masala paste and red chilli-coriander paste should be added and thoroughly mixed.

. Cook the meat and water after adding them.

. Mix thoroughly before adding little pepper powder.

. Remove from the flames and keep a side. Serve the flavourful beef roast alongside healthy entrees.
