While the words vegetable cocktail might seem unusual and odd, they have been a part of mixology for longer than acknowledged. Whether paired with fresh herbs, fruit or spices, vegetables offer their unique flavour and fibrous texture differently than when you cook with them. Interestingly enough, vegetables also bring a different kind of freshness to a cocktail recipe that fruits or fruit juices do not. Experimenting with a few liquors and playing safe with vegetables that have an adaptable flavour, is a great way to succeed in using them for a recipe.
