Love in every form warrants a celebration and what better way to celebrate love than by indulging your sweet tooth? Right about this time, your Instagram feeds would be full of rainbow cookies and cupcakes and we bet you’re tempted to try those treats out. Don’t worry, we’ve got your back. While you celebrate love and equality, here are some rainbow themed recipes you could try out: 

Rainbow donuts 

The only thing better than regular donuts are rainbow donuts. Rainbow donuts are aesthetic and delicious. They are the easiest pride treat that one can experiment with. Make sure that you plate these donuts well as the colours will only stand out if they are stacked near each other in lines. Enjoy your rainbow donuts with an iced coffee on the side.

Ingredients: 

Batter:

  1. 190g Greek yoghurt
  2. 300g Self Raising Flour
  3. Vanilla Extract
  4. 140g Caster Sugar
  5. 1 Egg
  6. 1/4 tsp Salt
  7. 80ml Milk
  8. 80ml Olive oil
  9. 3 drops of food colouring of various colours 

Icing: 

  1. 110g Icing Sugar
  2. 3 tbsp lemon juice

Method: 

  1. Preheat your oven to 180ºc.  Combine the dry ingredients together in a bowl and then gradually add the wet ingredients and mix well. Don’t add the food colours in yet.  
  2. Divide the batter equally into 6 bowls and colour each bowl with a droplet of different food colourings. 
  3. Now put the coloured mixtures in small amounts into each cavity of the doughnut pan, until 3/4 full. Swirl a little to achieve a marbled effect. 
  4. Bake for 15 minutes. Remove from the oven and allow to cool. 

To make the icing:

  1. Combine the icing sugar and lemon juice in a bowl. Mix these two ingredients together until a runny icing has formed.
  2. Wait until the doughnuts have completely cooled before decorating them. Once iced, top with colourful sprinkles and enjoy with a cup of coffee. 

Rainbow cupcakes 

Nothing sets the mood quite like a bite of your favourite cupcake. Rainbow cupcakes are fun to make and are one of the most popular treats made during this month. While there are multiple methods to icing rainbow cupcakes that range from easy to difficult, this recipe is on the easier side. Don’t be afraid to make mistakes while baking, because more than the outcome, it is the intent behind making the treat, that matters!

Ingredients: 

Batter:

  1. 150g caster sugar
  2. 150g butter
  3. 130g self-raising flour
  4. 20g cornflour
  5. 3 medium eggs
  6. 30ml semi-skimmed milk
  7. 1tsp vanilla extract
  8. Purple, blue, green, yellow, orange and red food colouring

Icing:

  1. 500g icing sugar
  2. 250g unsalted butter
  3. 1tsp vanilla extract
  4. 3tbsp semi-skimmed milk
  5. Colourful sprinkles 

Method: 

  1. For the rainbow cupcakes: Preheat your oven to 160°C/320°F/Gas mark 3. Place 10 cases in your muffin tin. 
  2. Make the cake batter by beating the sugar and butter with the vanilla essence until light and fluffy. Add 1 egg, 1/3 of the flour, and a some milk and whisk until completely merged and repeat until all the ingredients are used up.
  3. Add two ice cream scoops of the cake batter to each ziplock bag, then add food colour to each bag and massage until you have the desired colour.
  4. Starting with either red or purple, cut the corner of the bag off and squeeze a layer covering the bottom of the 10 cases. Then with the other colours, squeeze a layer of batter over the previous colour. 
  5. When you have completed all the colours, bake in the oven for 30 mins. Remove and cool in the tins for 10 mins.
  6. For making the buttercream, pour all the ingredients into a large bowl and beat until smooth and shiny.
  7. Once the rainbow cakes are cool, spread the icing onto the tops of the cupcakes. Decorate with rainbow sprinkles.

Rainbow chip brownies 

In case you’re too novice a baker, this sweet treat is just the perfect pick for you. All you would need to make this goey brownie a colourful treat are some rainbow coloured sprinkles or chips. These brownies are easy to make and take relatively less time than treats with rainbow icing do.

Ingredients: 

Brownie: 

  1. 180 grams all purpose flour
  2. Vanilla
  3. Half teaspoon baking powder
  4. Salt
  5. 42 grams dark cocoa powder
  6. Butter 
  7. 400 grams sugar
  8. 4 Eggs 

Topping Ingredients: 

  1. Milk chocolate
  2. Butter
  3. Heavy whipping cream
  4. Semi-sweet chocolate
  5. Rainbow chip sprinkles

Method: 

  1. Heat oven to 350°F. Prepare a 9x13 baking dish with non-stick spray.
  2. In a large bowl add flour, cocoa, baking powder, salt. Whisk together these dry ingredients until they are completely combined.
  3. In the bowl beat the eggs, sugar, butter, and vanilla until light and fluffy.
  4. Turn the whisking off. Next add in the flour mixture. Turn mixer on low and mix until ingredients are well incorporated.
  5. Pour brownies into a prepared baking dish and bake for 35 minutes at 350°

Topping: 

  1. To make the chocolate ganache, melt the chopped chocolate, cream, and butter in the microwave, stirring every 25 seconds. 
  2. After the brownies are cooled, pour the chocolate ganache over the brownies.
  3. Sprinkle the rainbow chips over the dish. 
  4. Refrigerate for about an hour and enjoy the treat.
