In India, mushrooms are cooked in several ways, in curries, as a dry subzi and sometimes added to dishes like pulao too. 

Mushrooms are often categorized as a vegetable but the fact is that they are neither a plant nor an animal food. They are simply spore bearing which have a thick body and are considered to have rich nutrient profile. They are a type of edible fungus with each type having its own kind of properties and qualities. Shiitake mushrooms are a popular kind which is deemed to be healthy for the body. It is a great source of fibre and protein, improving digestion and providing the body with the required energy. They are also rich in antioxidants which make them great for preventing infections. A rich thick soup or stew or mushroom not only serves as a decadent meal for one but is also very filling and wholesome. 

Making the most of these nutritious fungi, home chef Alison has found a delicious way of sprucing up the chunky delight. She prepares mushrooms with butter and garlic, giving it a light and refreshing taste and making the perfect snack for your evening today. 

Butter Garlic Mushrooms 

Ingredients 

  • Mushrooms - 400 g 
  • Onions- 1 medium chopped finely 
  • Butter - 3 tbsp 
  • Garlic- 1 tbsp 
  • Coriander - 2 tbsp 
  • White wine (optional) - 2 tbsp 
  • Salt as per taste 
  • Chilli flakes - 1 tsp 
  • Black pepper -1/2 pepper

Method

  1. Heat a pan on low heat and add butter to it. Sauté it for a few seconds. 
  2. Add chopped onions to it and fry it till the onions become translucent.
  3. Add mushrooms and sauté them till they turn slightly brown. 
  4. Pour some white wine to this mixture and sauté. 
  5. Add chilli flakes, black pepper and garlic for seasoning and sauté well. 
  6. Top it with salt and coriander. 
  7. Sauté till the mushrooms turn brown.

Cooking Tips

  • Mushrooms tend to leave water and could get mushy, so use a large pan so the mushrooms are well spread out. 
  • Cook on Med to High heat as mushrooms cook really quick. 
  • Be mindful while adding salt in the beginning as mushrooms tend to shrink.
