Similar in texture to a pound cake, this cake is also often referred to as an ice cream loaf. It does require the dairy and sugar from the ice cream to achieve the right texture, so skip the low-fat or sugarless ice cream this time and indulge. Make sure it’s smooth and melted before combining it with the flour.
The trick to getting the right amount of rise also depends on the self-raising flour you have. If you can’t find any ready-made it’s super simple to make your own. Just mix 1 ½ teaspoons of baking powder and ¼ teaspoon of salt per cup of flour in your recipe.
Kids will love these cakes but you can also try a more adult version with a boozy rum and raisin cake. Mix and match the toppings and ice cream flavours for a fun-filled experience.
Ingredients:
- 2 cups ice cream
- 1 ¼ cups self-rising flour
Method:
- Preheat your oven to 175˚C.
- Combine the melted ice cream and self-rising flour. Mix until well combined.
- At this stage, you can add any additional sprinkles, chocolate chips, or goodies to the batter.
- Line a loaf pan with parchment paper and grease with butter.
- Pour batter into a loaf pan and spread evenly.
- Bake for 35-40 minutes.
- Allow it to cool on a wire rack before cutting.
