Ingredients:
Sugar - 6 Tbsps/ 90g
Curd - 3 Tbsps/ 45g
Milk - 6 to 7 Tbsps/ 90g
Vinegar - 1/2 Tbsp
Oil - 3 Tbsps/ 35g
Whole Wheat Flour/ Atta - 1/2 Cup/ 65g
AP Flour/ Maida - 1/4th Cup/ 32g
Baking Soda - 1/4th tsp
Baking Powder - 1 Tsp
Salt - 1/4th tsp
Jamun - 3/4th Cup/ 150g ( unpitted )
Vanilla Essence - 1/4th Tsp
For the Crumble :
AP Flour/ Maida - 2 Tbsps
Sugar - 1 Tbsp
Butter - 1/2 Tbsp
Salt - A pinch
Method:
Start by pitting the jamuns & chopping them roughly. Mix them with a little bit of flour (around 1/2 tablespoon) & keep aside for later use. Mix milk & vinegar together & keep aside for 5 mins. Meanwhile, in a bowl, cream sugar & oil until light & fluffy. Add in the curd and vanilla essence along with the milk vinegar mixture & mix it in. Sift in the dry ingredients - whole wheat flour, maida, salt, baking powder and baking soda. Gently mix the batter using the cut and fold motion & add in the jamun - mix well. To make the crumble, mix flour, sugar, a pinch of salt & metled butter together. Add the cupcake batter to a cupcake mould lined with cupcake liners. Top each cupcake with some crumble & bake them in a pre-heated 180C for 15-18 mins. Serve warm and Enjoy.
