Ingredients

  • 1 cup cooked and mashed sweet potatoes
  • 1 ripe banana, mashed
  • 1 ½ cups oats
  • ½ cup almond flour
  • ¼ cup unsweetened almond milk (or any plant-based milk of your choice)
  • 2 tablespoons natural nut butter (such as almond or peanut butter)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • A pinch of salt
  • Optional add-ins: chopped nuts, raisins, or dark chocolate chips for extra flavor (choose sugar-free or naturally sweetened options)

Method

  • Preheat your oven to 175°C and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the mashed sweet potatoes, mashed banana, almond milk, nut butter, and vanilla extract. Mix well until smooth and well combined.
  • In a separate bowl, combine the oats, almond flour, cinnamon, baking powder, and salt. Stir to mix evenly.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring well to form a thick cookie dough. If desired, fold in any optional add-ins at this stage.
  • Using a spoon or your hands, scoop out portions of the dough and shape them into cookie rounds. Place the cookies onto the prepared baking sheet, leaving some space between each cookie.
  • Gently flatten each cookie with the back of a spoon or your fingers to achieve your desired thickness.
  • Bake in the preheated oven for 15-18 minutes or until the edges turn golden brown.
  • Once baked, remove the cookies from the oven and let them cool on a wire rack for a few minutes.
  • Enjoy these delicious vegan, sugar-free sweet potato and banana cookies as a guilt-free snack or treat!
  • Feel free to adjust the sweetness and spices to suit your taste preferences. These cookies are best stored in an airtight container at room temperature and can be enjoyed for several days.
